Fennel seeds is an ancient and common plant known to the Greeks and spread throughout Europe by Imperial Rome. The name comes from the Latin foeniculum, meaning “little hay”.

Almost all parts of the plant are useful. Fennel leaves are used in French and Italian cuisine. It is traditionally considered one of the best herbs for fish preparations.

It is carminative, a weak diuretic and a mild stimulant.

Whole fennel seeds requires extra care during cultivation. It is a hardy perennial but vulnerable to attacks by weeds and pests. Fennel seed sowing is done in July and October. Harvesting is done during January and March.

The flower heads are harvested before the seeds ripen. When completely dry, the seeds are threshed out. This process helps to preserve shape and lock in aroma.

Dried ripe seed of Foeniculum vuigare. Half moon shaped, bearded, length is approx. 5mm.

The odour of ground fennel seeds is aromatic sweet. Flavour is characteristic. No mustiness or rancidity.
